This recipe is made with leftovers!! That’s right leftovers!!! We usually make two squash at a time leaving us plenty of leftovers. My roasted butternut squash recipe is here, so you can make this delicious dish!! This is a hearty filling soup! Perfect for cold weather days!!
Servings: 4 servings
1. In a sauce pot add your left over roasted squash (about 3 cups) with a pint of heavy cream and a bit of salt and pepper.
2. Allow it to warm up and then use your emulsion blender to mix it all up. Now you have soup!!! Best served hot.
