Roasted Butternut Squash

I think butternut squash is the next best thing to sweet potatoes. They are delicious, filling and packed full of goodness. You can make plenty of soups and side dishes with this little weird shaped veggie. I think I was in my late 30’s when I had it for the first time. I couldn’t believe what I had been missing!! This recipe is great to use your next day leftovers and transform them into soup!!!

Cook Time: 40 minutes
Total Time: 1 hour 10 minutes
Ingredients
8 cups (cubed) butternut squash
1 tablespoon pink sea salt
1 tablespoon cracked black pepper
1/4 cup extra virgin olive oil
1/4 teaspoon paprika
1/4 teaspoon garlic salt
1 tablespoon fresh chopped garlic
1/2 tablespoon cinnamon
1/4 teaspoon roasted cumin
Instructions
1. Preheat your oven to 400F.
2. Grab a baking sheet and line it with parchment paper.
3. Then add your cubed up butternut squash. Drizzle over your oil, then sprinkle all the other ingredients on top. Grab a spoon or a spatula and mix all the ingredients, so all of your squash have seasoning on them.
4. Now, they are ready to go in the oven. Usually takes a good 30-40 minutes. You will know once it’s soft. I like to get a browning on top before I serve. But that’s up to you.
