Chicken Salad Supreme (keto-friendly)

Can we speak on salads for a moment. Like seriously take a minute to be thankful for how far salads have come over the years!! I mean really!! Salads are no longer just a side dish. They no longer have to be boring or something you feel obligated to eat. They're down right enjoyable!! I make dozens of different types of salads. In fact, I would say that they are my specialty. It's something that most of my friends and family will rave over. Sometimes it's on sheer presentation, but it's mostly because they are freaking incredible. I hope through this new journey of food blogging, I can share with you my many killer salads and homemade dressing. But enough with that.... Let's talk about this chicken supreme salad shown above!! It's a meal in itself, packed full of protein. One thing I have to say is you can always create custom salads for your family likes with little effort. Even if you have picky kids, add something they love in it, like strawberries, grapes, apples.... Find something they love, and they will begin to enjoy salads too. I love having different types of chicken cooked up and some hard boiled eggs ready to go during the week. It allows you to whip up something this GOOD in ten minutes or so. Salad prepping is one of the easiest things to prep for. AND prepping is hard for me. So chop up veggies, use an already made salad bag (like spring mix), and pre-make some chicken for this delicious salad. Here is one of the marinades I like using on my chicken to make it taste delicious! Then, putting together a salad like this will be a breeze. I like to serve it on a platter because I believe you taste with your eyes, and it just looks nicer. You can also do a make your own salad by making your own mini bar. This way everyone gets what they want. Bonus: you can use paper plates and bowls and have virtually no mess to clean up!! If you are not a salad eater, I hope I make you come out of your comfort zone and try one.


Servings: 1 serving

Prep Time: 15 minutes


Ingredients

  • 1/2 pound (cut up, cooked) chicken

  • 3 (cut) hard boiled eggs

  • 1 bag arugula

  • 1/4 cup (pre-packaged, chopped) walnuts

  • 1/4 cup (pre-packaged, sliced) almonds

  • 2 tablespoons cranberries

  • 4 ounces (diced) cherry tomatoes

  • 4 ounces (sliced) strawberries

  • 1/4 cup (fresh, chopped) mozzarella

  • 1/4 cup (chopped) cucumbers


Instructions

1. You can grab a dish or bowl depending on what you like to use. The first layer is your arugula. I like to lay that down, sprinkle some salt and pepper on top, and drizzle over a little extra virgin olive oil on top. Then leave it to sit while you continue doing other step.


2. The next step is to cut up the cooked chicken, cucumber, tomatoes, strawberries, mozzarella, and the hard boiled eggs.


3. Finally, you top the salad with all of your chopped ingredients, cranberries and nuts. Arrange your toppings how you like.
