I will start by saying what I've said before. You can make anything you want into a salad. I love a good salad!!! I never get bored of them because I change them up. The only thing I was missing from this was the hard boiled egg. I forgot to add it before I took the picture. I will include it in the ingredients. So this is your basic lunch time salad. I love to use the new cheese wraps and roll them up with my meats. They stay together much better! In this salad, the base is spring mix with some spinach, avocado, turkey, Colby Jack cheese, deluxe ham, sliced almonds, and chopped walnuts. You can also add a sprinkle of shredded cheddar on top. I feel you can add a variety of dressings to this salad. You can use ranch, green goddess, or my arugula dressing. Whichever you prefer.
Servings: 1 serving
Prep Time: 10 minutes
1 slice (deluxe) ham
1 slice Colby Jack cheese wrap
1 slice turkey breast
2 cherry tomatoes (chopped)
1 tablespoon (pre-packaged, chopped) walnuts
1 tablespoon (pre-packaged, sliced) almonds
1 hard boiled egg [optional]
1 cup spring mix
1 tablespoon shredded cheddar [optional]
1/2 avocado (chopped)
4 slices (chopped) cucumber
1. Grab a plate. Load up your greens. Chop up your cucumbers, avocado, and tomatoes. Now, place them on your plate.
2. Time to make your lunch meat rolls. Place a slice of ham down on a cutting board. Now, place a piece of cheese on top; then, add a slice of turkey. Now, you want to roll that up and slice them about an inch apart. Now, you're ready to add them on your salad.
3. All you have left to do is add your nuts. I mean, who doesn't love nuts on their salads? :) Pick out your dressing and enjoy!!!
