Cheesy Crack Chicken

Updated: Feb 19, 2021

What can I say about cheesy crack chicken.... I can tell you that it's A BIG HIT in this household. Make a double batch; you WILL WANT leftovers. Unless it's a pasta dish, my family will almost never eat leftovers. This, they would eat all week long!! It's hearty, comforting, filling, and so easy to make!!! It's completely keto. However, if you're not into keto, serving it over a bed of rice is incredible!!! One of the other options is to turn it into a dip and serve it with toasted French bread. You can also make it into a sandwich, or add it on top of a baked potato!! So many things to try with this one simple recipe.

Servings: 6 servings

Prep Time: 10 minutes

Cook Time: 4 hours - 5 hours (HIGH) | 5 hours - 6 hours (LOW)

Total Time: 4 hours 10 minutes - 5 hours 10 minutes (HIGH) | 5 hours 10 minutes - 6 hours 10 minutes (LOW)

  • 2 pounds chicken breasts

  • 1 tablespoon ranch powder seasoning mix

  • 16 ounces cream cheese

  • 12 pieces (chopped, cooked) bacon

  • 2 cups shredded cheddar cheese

  • 1/2 cup (sliced) green onions

  • 1/2 cup (chopped) tomatoes

  • 1/8 teaspoon black pepper [optional]

Ways to Serve

  • rice [prepared, optional]

  • sandwich rolls [optional]

  • (toasted) French bread [optional]

  • potato [optional]

1. OK, let's get started on this crockpot dish. Add the chicken, ranch powder, and cream cheese. You would also add your black pepper here, if desired.

2. Cover and cook on LOW for 5-6 hours or HIGH for 4-5 hours without opening the lid during the cooking time.

3. Once the chicken is cooked, you're going to want to shred it up good. Then, stir in the shredded cheese. Add about 6 pieces of chopped bacon and 1/4 cup of green onion. Mix well to stir up any excess of liquid.

4. Now, you're ready to plate. Add more chopped up bacon, 1/4 cup of green onion, and chopped tomatoes to make this dish look as beautiful as it tastes!!!
