This chicken marinade is one of my favorites. It's not only simple, but it is delicious. I usually just get a baking dish, put my chicken inside, and throw the ingredients right on top. It's so simple that I will usually make a bunch of chicken at a time; this way I have it throughout the week for meal prep. Things that this chicken marinade is good for are the following: chicken salad, Caprese salad, salads, chicken Alfredo, chicken BLT sandwiches, chicken fried rice, chicken soup, and so much more.
Servings: 1 pound of chicken
Prep Time: 15 minutes
1/2 cup extra olive virgin oil
1/2 cup (fresh, chopped) parsley [you can use dried parsley as well]
3 tablespoons (chopped) garlic
1 teaspoon sea salt
1 tablespoon black pepper
1. For this, I usually use a big square glass Pyrex dish. Then, all you want to do is add everything to a bowl, and mix it together (except for the parsley). Then pour the mix directly on top of your chicken.
2. Now, place the parsley on top of your chicken. You can leave this set for as little as two hours or overnight. The longer you leave it sit, the deeper the garlic flavors will get. After you let the marinate sit, you can cook the chicken as is or remove it from the marinade.
